Quinoa and Sweet Pepper Recipe (gluten-free)

2lbs. Sweet peppers
Olive Oil
2 cloves of garlic (minced)
Sea salt
Crushed red pepper flakes
2 cups of quinoa
Heat olive oil and minced garlic in a saucepan, over medium high heat. Add the peppers to the pan and sauté, until peppers are soft and caramelized. Add sea salt and crushed red pepper to taste. Follow package instructions on how to boil the quinoa. I like to add sea salt and some crushed red pepper flakes to my quinoa, as it boils. Once quinoa is cooked, add it straight to the peppers. With a spoon, scrape off the caramelization that has formed on the bottom of the pan, and stir it into the quinoa. Stir until everything is evenly coated.
