Roasted Beet and Goat Cheese Salad

I made this salad up for an early lunch today, and it turned out delicious! I was kind of surprised, because I don’t usually experience with goat cheese all that often. This is a good recipe that is easy to whip up and store in your refrigerator on those days when you don’t know what you should have to eat. This nutritious snack (or meal), will give you the energy you need for everyday actives.

Recipe:


1 can of beets-Make sure they only contain water and salt.
4-5 ounces of goat cheese
1 tbs. of fresh parsley
1 cup of walnuts


Step 1- Preheat oven to 400 degrees. 
Step 2- Place canned beets in a baking sheet, and place in oven for 30 min.
Step 3- While the beets are roasting, combine the goat cheese and parsley into a bowl and mix together.
Step 4- When the beets are finished in the oven, dice the beets and then add the them to the bowl with the cheese and parsley.
Step 5- Stir in the walnuts, and make sure all the ingredients are well combined.
