What’s Cooking? Today’s Dish: Lettuce Wraps with Fried Rice and Broccoli

I made these lettuce wraps for lunch today, and they came out great!

 

The recipe:

 

Boil 4 cups of water, and then add in 2 cups of short grain white rice. In the mean time, coat a sauce pan with olive oil and garlic. Add in one head of chopped broccoli, and let cook until rice is done. I sprinkled some crushed red pepper flakes and sea salt on the broccoli, but you can put whatever you like. Once the rice is boiled, add the rice to the broccoli and mix well. Then, drizzle soy sauce over the rice and broccoli mixture. I used Tamari Gluten-free Soy Sauce (reduced sodium), but you can use whatever soy sauce you like. Sometimes I will add a little more salt for taste at the end. Serve rice on a few leaves of iceberg lettuce. That’s it! It’s that easy!
