GAPS Introduction: Day 10

Dessert/night time snack-

Coconut hazelnut bread

It was the first day that I introduced baked bread made with nut flour. There was a basic recipe for the GAPS bread in the book, but I wasn’t too impressed with it. I’ve made a lot of different types of gluten/grain-free breads before, and I could tell by the ingredients that the bread wouldn’t taste so good. That’s why I made up my own. It turned out fairly good for being grain and dairy free. 

2 cups of hazelnut flour (almond flour can be used instead)

4 eggs

1 teaspoon of cinnamon 

1/4 cup of coconut oil

1/4 cup of dried coconut

Mix all wet ingredients together, then mix in the dry. Top off batter with extra sprinkled coconut if desired. Bake at 300 degrees Fahrenheit for 45 min to 1 hour. Poke bread to see if your tool comes out dry/clean.
