Dinner on the GAPS (chicken recipe)

So I thought I would share my roasted chicken recipe, since it’s very simple and it tastes great!

Ingredients-(serves 8)

2 young chickens (today I used antibiotic-free chickens, but usually I would like buy organic chickens)

2-3 lemons

olive oil

sea salt

garlic powder

Wash your chickens and then place them in a large enough roasting pan. I like to cut off some of the hanging fat and anything real bloody. Usually the healthy chickens are pretty clean, so you don’t have to worry that much about it. There’s a plus to eating healthy!

So now slice your lemons and place them under the chicken’s skin, and then place some in the cavity of the chicken. After that, drizzle with olive oil and season with sea salt, garlic powder and oregano. I like to use my hands to make sure everything is coated evenly. Next, place the chickens into the oven at 400 degrees Fahrenheit for 1-1 1/2 hours, depending on how crispy you like your chicken.

Don’t forget to save the carcasses for your broth!

I made these before and posted about them. Click Here for the recipe. To make this GAPS-friendly, I just opted the arrowroot starch. It came out perfectly fine.
