This is my favorite egg salad to make. I’m not too crazy about eggs, but I know they’re really good for you so I try to find ways that I will enjoy them best. This is definitely one of my favorite ways to eat them!
3 hard-boiled eggs (organic)
2 tsp. of mustard (your choice, I sometimes use Dijon or sometimes just plain yellow)
sea salt, pepper
Lettuce/greens of your choice (organic)
Boil your eggs, let cool. Peel your eggs once they’re cooled, and then place them in a bowl and chops them. Cube your avocado and add it to the bowl with the eggs. Add in mustard of your choice along with sea salt and pepper. Mix all the ingredients together and lay egg salad on a bed of greens, with a pickle on the side.
