Corn-less Cornbread Muffins (GAPS-Friendly)

These corn-less cornbread muffins are delicious! They taste like the real thing! Actually, I think they even taste better, since I wasn’t completely crazy over regular cornbread muffins. These are moist, flavorful, and very easy to make. This recipe is from Empowered Sustenance.

Click on the link above to get all of the ingredients to this recipe.

Beat all ingredients together.

Scoop batter into muffin tins.

Finished muffins.

Make sure you don’t forget the butter! 

The muffins in these pictures were all made with apple sauce, but I also tried out pumpkin puree in replacement of apple sauce. Both were very good!
