Root Vegetable Salad

I quickly threw this salad together for lunch one day, and it came out delicious! This salad makes it perfect for fall, since it contains root vegetables, and along with some fall/winter colors. 

Ingredients-Serves 3

2 large bags of organic mixed greens 

3 organic/pastured hard boiled eggs (sliced or chopped)

3 beets (sliced or chopped)

4-5 radishes (sliced or chopped)

almonds (thinly sliced)

Add all ingredients into a large salad bowl. Mix in the dressing, and enjoy!

Basic Italian Dressing-

Extra Virgin olive oil

red or white wine vinegar

sea salt

black pepper

garlic powder

Add all ingredients according to your taste

Note- Remember, any of the ingredients that you have an allergy to, (like almonds or eggs), can be removed from the salad or replaced with another type of protein.
