Vegan Chocolate Truffles

I haven’t had truffles in forever! I remember when I did have them, I loved them (but who doesn’t love anything chocolate?). I saw this recipe for these delicious treats in the Whole Living Magazine. 

Ingredients-

8oz. of dark chocolate (I used my homemade chocolate chip sauce instead) 

1/4 cup of coconut oil

1 tsp. of vanilla extract

1/4 cup of pure cocoa powder (for rolling) 

Heat chocolate in a pot until melted. Remove from heat, and stir in the rest of the ingredients, except for the cocoa powder. Add the liquid chocolate into a bowl and place it in the fridge until cold and somewhat hard but still pliable. Take out of fridge, scoop out chocolate into small ball/round shapes and roll into cocoa powder.  Repeat until all chocolate is used up. Place the truffles on a parchment paper lined baking sheet. Place in the fridge until firm. 

Note- If you are using the chocolate chip sauce recipe like I did, you just use that recipe for your chocolate, not the one listed above. The same ingredients are used in both recipes, just different measurements.
