Creamy Acorn Squash

This recipe is from Food Magazine

Ingredients-Serves 4

2 acorn squash

sea salt, pepper

1/4 cup of cream (I used raw)

8 sprigs of fresh thyme

1/2 cup of freshly graded parmesan cheese

1.)Preheat oven to 375 degrees Fahrenheit. Cut the squash in half, remove the seeds. Place squash halves cut side up on a rimmed baking sheet, and season with sea salt and pepper. Divide cream and thyme among squash halves. 

2.) Bake until squash is tender (about 45 minutes to an hour). Sprinkle parmesan cheese evenly among halves, and then bake again for another 15 minutes. 

As you can see, I made enough to feed 8 people.

I added my thyme to the raw cream, and then poured it evenly among the halves.IMG_1525

Place the squash into the oven.IMG_1526

Grate the parmesan cheese…..IMG_1524
Add it to the squash. Bake again in the oven, until cheese is melted.
