Healthy Homemade Vanilla Ice Coffee

I just got the professional vitamix for Christmas, and I’m already in love with it! It is the best kitchen appliance I’ve ever used! It works as a blender to make fresh smoothies and other beverages, it can replace your food processor (It actually works 100 times better than a food processor!), and you can make healthy green juices too! No juicer needed! 

The vitamix came with a large recipe book and I immediately opened it and made the first recipe that I saw, which was this delicious healthy ice coffee! I adapted it a little to make it extra healthy and omitted the sugary syrups. 


3/4 cup of strong coffee or expresso (decaf or regular)

1 cup of milk (I used organic lactose-free milk, but any milk can be substituted)

1 1/2 tsp. of vanilla extract

1 1/2 cups of ice

In a vitamix or blender, blend on high speed until the coffee and milk is thick and frothy.
