Cinnamon/Sugar Coconut Chips (Sugar-free/Vegan)

These are very simple, but also really tasty. 

For the “sugar” in this recipe, I used Organic Coconut Sugar, which is made out of just granulated coconut nectar. I don’t believe coconut sugar is GAPS-legal, but I’ve never had it bother me, so I still use it occasionally (if honey can’t be used). I’ve tried pretty much every natural sweetener out there, and my two favorites are honey and coconut sugar. Maple syrup isn’t bad either. 😛

Ingredients I used-

2 cups of organic coconut flakes

1 tbs. of coconut sugar (may need to add an extra teaspoon)

2 tsp. of cinnamon 

1 tsp. of pumpkin pie spice

coconut oil for oiling the pan

Toss all the ingredient together with your hands, until well blended. Oil a baking sheet (or you can use a roasting pan like I did). Place the coconut flakes onto the baking sheet/pan and bake in the oven for 4-5 minutes at 357 degrees fahrenheit. Shake the sheet about every minute, to prevent the flakes from burning.
