Apple Pancakes (Grain-free/Paleo)

Like all my pancake recipes, the base of the batter is the 2 egg 1 banana mixture. Once you mix that together, you could add whatever you’d like to it. So far, I’ve added berries (check it out here), and now apples. I’ve had great success with each one. They all taste so good!

Ingredients-

1 original 2 ingredients pancake recipe

splash of pure vanilla extract

1/4 of an apple (I used red), cut into small pieces 

1/4 tsp. of baking soda

Mix all together. Coat saucepan or griddle with coconut oil or palm oil.  Turn on heat to medium-high. With a ladle, scoop batter and pour into pan/griddle. Once the sides are cooked, you’re ready to flip. It’s always best to just keep peaking under the pancake, just to see if it’s ready or not. Continue, until batter is gone.
