Cauliflower Rice w/ Veggies

Please excuse my lack of recipes the past couple of weeks. The main reason why I’ve been behind, was that I had some allergy stuff going on this past week. With that being said, I don’t eat too much when I’m not feeling well, which means no cooking, which means you don’t receive a recipe.

Okay, that’s all cleared up now. So, this recipe should have been posted a long time ago, (like maybe a little over a month). That’s a pretty long for me, being that I usually cook, and then go and quickly blog it.

Anyway, cauliflower rice is pretty much a staple in Paleo eating, or pretty much just grain-free eating as well. So, with grains out of my way, I had to try and make some cauliflower rice for myself. I did and it turned out very tasty. 


2 heads of cauliflower (chopped)

3-4 organic carrots (chopped)

2-3 stalks of organic celery (chopped) 

1/2-1 onion (chopped)

2 cloves of garlic (minced)

1 butternut squash (pre-roasted in the oven for 45-60 minuts)

Coconut Aminos Soy-free Sauce (GMO-free soy sauce can also be used) 

organic butter (Leave out if vegan. The butter gives the rice a really good flavor and fluffs it up more.)

sea salt

red pepper flakes

olive oil/coconut oil/palm oil (either one is fine)

Chop up all vegetables. Add just the cut up cauliflower into a high-powered blender/vitamix. Set the blended cauliflower aside. In a large sauce pan, coat the bottom of the pan with oil of your choice, and add in the onions and garlic. Once that cooks for a few minutes, add in the rest of the vegetables. Don’t add in cauliflower or squash yet. Let the vegetables cook down a lot, until they start to feel a little tender. Add in the blended cauliflower, the spices, coconut/soy sauce, and a few tablespoons of butter. Add enough of each to your liking. Let cook covered (stirring occasionally), for about 30-40 minutes. Scrape out the butternut squash from its skin and add it into the rice. Cook for another 5-8 minutes. Serve.

Note-Keep adding the coconut/soy sauce in little by little and test try the rice often, until you added enough sauce to your liking.

Add in the cauliflower, spices, coconut/soy sauce, and butter.

Add in the pre-roasted squash
