Chicken Stir Fry (GAPS-friendly)

I haven’t had a stir fry in a really long time, which made me want to make one. This came out really good, and my whole family loved it!

If you aren’t on the GAPS, and don’t eat meat, you could use tempeh (the healthiest soy). I would stay away from the tofu, which can be very harmful to your health. Read about soy here.

What you’ll need-

1 head of broccoli

4 organic carrots

8oz. of white mushrooms

1 lb. chicken breast (hormone and antibiotic free)

Coconut Secret Aminos (vegan, gluten, soy, GMO-free, sauce. It’s made up of organic coconut sap aged and blended with sun-dried mineral-rich sea salt. It tastes great and very similar to soy sauce.)

Coconut Oil

1tsp. of finely chopped ginger

3 cloves of garlic (minced)

Sea salt, pepper

How to

Chop up all vegetables and cut chicken (or other protein) into smaller bite size pieces. Heat a large sauce pan with coconut oil and add in garlic. Once the garlic has browned just a little, add in all of the vegetables. Let the vegetables cook until they’re al dente. Add in a generous amount of coconut aminos sauce along with the finely chopped ginger. Sprinkle sea salt and pepper. Add in the chicken (or other protein) and then add in some more of the coconut aminos sauce. Stir occasionally. Once everything is fully cooked, it’s ready to be eaten!

I’d thought I would take a picture to show you with this sauce looks like. A lot like soy sauce, right?

Here is what the sauce looks like, along with the juice from the mushrooms.

Add in the protein.

Almost done!

The finished dish.

Enjoy!
